Strawberry oven-baked risotto

There's tennis at Wimbledon, druids at Stonehenge and when I leave the house I don't know whether to take sun-tan lotion or an umbrella - it must be the first day of summer. To celebrate, and also inspired by Fay at Dreaming of an Aga's lovely strawberry post here we made Strawberry Risotto today. It was delicious - and really a fancy way of describing strawberry rice pudding.

250g strawberries
1 litre of milk
1 lemon - juiced
100g soft brown sugar
200g Arborio or Carnaroli rice
1 cinammon stick, halved
250ml cream
Oven dish greased with unsalted butter

Pre-heat the oven to 180C.
Hull the strawberries
Mix the milk and lemon juice. Add the sugar and mix well.
Put the risotto rice and strawberries in the oven dish and add the cinammon stick
Pour the milk mixture over the rice and strawberries
Bake for 40 mins or until the rice is soft
Serve with double cream.

    I know what you mean about the weather; poor Daisy was out in our backyard this afternoon playing 'seaside' - and was suddenly freezing cold in her swimming costume and all her beach equipment blew away. And then it rained.
