Ingredients (makes 14 fingers)
300g unsalted butter, softened
135g soft brown sugar
420g plain flour - sifted
pinch of salt
1 tablespoon of caster sugar
20cm square baking tin - lined with baking paper
Beat the butter and sugar until light and fluffy.
Add half the sifted flour and salt and mix thoroughly before adding the other half and mixing.
Pour into a the baking tin and prick witih a fork all over.
Place tin in the fridge for 15 minutes and meanwhile heat the oven to 170c.
Bake for 45 mins until golden.
Remove from the oven and sprinkle with the caster sugar. Whilst still warm cut into fingers.
